May the Fourth be with you! Haha, I know, so corny, but it’s May 4th, Star Wars Day! In honor of the occasion, I threw together some vanilla cupcakes, topped them with an easy vanilla buttercream frosting and dressed them up with some red, green and blue sprinkles.
I’ve been hanging on to this adorable Williams Sonoma Star Wars Rebel Alliance Cupcake decorating kit for a while. I’ve used a few of the decorations to dress up some cupcakes for my boyfriend in the past, but I rediscovered them last week as I was cleaning out the storage closet — right in time for Star Wars Day! I actually snagged these cupcake decorations on clearance at Williams Sonoma a few years ago. (FYI, there’s actually a bunch of cute Williams Sonoma Star Wars-themed bakeware on sale for 20% off right now.) They don’t carry these exact decorations anymore, but you can still find them on eBay.
The cupcakes are from a box mix (I always have some on hand), but the frosting I used is the easiest homemade buttercream recipe. There’s about a million buttercream frosting recipes on the internet, but I’ll include how I made this one below.
I think there are two key things to remember in a good buttercream: One, make sure you really whip that butter (I put my Kitchenaid whisk attachment on and let it whip it until the butter looks white). Two, since buttercream is primarily just butter and powdered sugar, I like to use equal parts salted and unsalted butter. A little salt helps balance out the sweetness. Make sure you start with room temperature butter, too.
Vanilla Buttercream Frosting
1/2 cup unsalted butter
1/2 cup salted butter
3 cups of powdered sugar
1 tsp of vanilla extract
milk (for consistency)
1. Whisk butter on high until light and nearly white in color.
2. Lower the speed on your mixer and slowly add in one cup of sifted powdered sugar. Stop and scrape down the sides of the bowl to make sure everything is incorporated.
3. Add vanilla extract.
4. Continue to slowly add in powdered sugar. If frosting is too thick, you can add in milk a few drops at a time until you’ve reached the desired consistency.
